This hack is all about taking that delicious, savoury kebab and stretching it into a wholesome, hearty meal that feeds four, without breaking the bank!
Method
Get the Bulgur On
Pop your bulgur wheat into a heatproof bowl. Pour over 400ml of boiling water (or follow pack instructions, usually double the volume of water to bulgur). Cover with a plate or cling film and leave for 15-20 minutes until the water is absorbed and it's fluffy. Fork through to separate the grains.
Sizzle Those Onions
While the bulgur's doing its thing, slice your onion(s) thinly. Heat a drizzle of oil in a frying pan over a medium heat. Add the onions and cook gently for 8-10 minutes until they’re lovely and soft, slightly caramelised, and smelling divine. Proper comfort!
Warm the Kebab
If your kebab meat came in strips, give it a rough chop to make it easier to share. Add it to the pan with the softened onions for a final 3-5 minutes, stirring occasionally, just to warm it through gently. You don't want to overcook it!
Assemble Your Bowls
Divide the fluffy bulgur wheat evenly between four bowls. Spoon over the warm kebab meat and onion mix. This is where it starts looking like a proper plateful, isn't it?
Finish with Hummus
